For those living in the North East, (like Julie and I), this time of year means finding rich nutrients and vitamin filled foods to replace the sun, and all the fresh fruits and vegetables summer brings. I was recently looking for easy and healthy recipes, that the whole family would enjoy, and that would give us the boost we need to get through the last cold weather days.

 

I turned to my friend Faye, a nurse and nutrition enthusiast, who’s also an amazing cook. She gave me her morning smoothie recipe and claimed that everyone in her family loves it and asks for more. I was doubtful but guess what: it’s amazing. It’s easy. And the whole family truly loves it. And that’s not all, the recipe has spinach, which means my kids start the day with a super food filled with protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, potassium, copper, and more. And this is why we call our kids friendly smoothie, the Superhero Green Smoothie. Because we tell our kids that if they eat spinach they will develop super powers like run incredibly fast. They love it and we get a good laugh out of it.

 

Here’s the recipe for Faye’s Superhero Green Smoothie:

In a vitamix or blender add:

1 bag of organic frozen mangoes

1 banana

1/2 a bag frozen spinach

Cover with fresh water and blend away.

Serves 4

Note: You can replace the mangoes with peaches if you would like less sugar.
